What Blog?! Who are you!?


 
I have been a serious slacker for this here blog - if you can even call it that these days!  For the last two weeks or so life has seriously gotten the best of me! No excuses I know however between my crazy work schedule, trying to be as consistent as possible with the gym and meal planning, non-stop weekend plans and the icing on the cake I have had a pretty nasty cold this last week, the blog has been on the back burner. The way back burner, like my oven is now the length of a bowling alley lane, back burner! Again, probably not the best excuse but it’s the honest truth.


This weekend is Super Bowl…obviously Courtney…and it is being hosted here in New Jersey/New York .. again obviously!  Conveniently Inconveniently, Met Life Stadium is approx. 6.7 minutes from my house. Translation = craziness has just escalated about 14 notches on the crazy spectrum. I promise to return next week and have some updates on my busy, however uneventful life has been!

Taste of Tuesday: Veggie Patty Dinner


Along with the rest of the world, I have really been trying to get my but into shape...literally and figuratively. So instead of rushing home from work starving and eating whatever is in sight I have been planning my days much better with breakfast, lunch and snacks and getting to the gym right after work. Sometimes I get home and all I'm hungry for is a big shake before I head to bed. Just not hungry after the gym sometimes, especially when I get home all I have time for is a quick shower, prep for the next day and bed. BUT there are some days that I am starving when I walk through that door. Here I have something that is filling, healthy, quick, easy and is the perfect post-workout meal!
 

What you need:
1 cup of fresh string beans (if you use frozen or canned be sure to rinse in a strainer)
1 MorningStar Garden Veggies Patties
1/2 cup brown rice
1 tsp coconut oil
Hot Sauce


What you do:
Since I try to prep a lot of my weekly foods on Sunday most of this is already pre-cooked and just needs some heating up. In a small skillet add a little coconut oil to avoid sticking and heat up veggie patty. I usually cook it straight from the freeze so it takes a little longer. You can always microwave them, which I sometimes do as well. While that is cooking, place steams beans and brown rice on a plate and heat in the microwave for about 1:30 or until desired temperate. Add a little hot sauce to the rice for some flavor. Once veggie patty is done slice on a plate and enjoy!

Pizza Week!


Happy Monday! Apparently it is Pizza Week! I have never heard of such a thing but when I was reading through my morning news today I came across an article in Zagat which shows 50 Statesand 50 Pizzas! I feel like you are not human if you don’t like pizza. Coming from New Jersey and being in New York all the time, pizza is definitely one of my favorite things to eat. It’s quick, easy, sometime cheap and now it is being made in healthier versions. Don’t judge me if I still settle for the fat version. So in honor of pizza week I decided to share this lovely article with all of you. I know there are a bunch of you that are from all over the country in different states and I thought it would be interesting to see if you love your states pizza or even if you have been to the pizza places that are displayed in the article.


I’m not going to lie, on my 30 before 30 I say I would love to visit all 50 States; I may or may not have to include trying pizza in every one of them! Although I think I will pass on the python pizza in Florida and get something a little more traditional. I’ve been to Florida but I have never heard of python pizza. Is this really a popular thing down there?


Here is the New Jersey Pizza! I have never had Marino’s for the mere fact it is located about 2 hours away from me but I have had a steak and potatoes pizza and it is pretty dang tasty! It’s super filling between the dough steak and potatoes but it is definitely a good change up from regular cheese pizza.

Five on Friday!


I have never done a ‘themed’ Five on Friday but I was thinking about how I have yet to post any 2014 resolutions and this may be the perfect opportunity to share. I’m not too big on resolutions but it may help me to stick to these little resolutions since I’m now sharing with the world, I am a little more held to deliver!

 
one :: I am always being conscious of living a healthy lifestyle, eating smarter and healthier and trying to be in good shape. (typical goal I know I know!) However, as we all know this tends to get lost in the wind, or chaos of life throughout the year and I tend to lose track of what I am trying to accomplish. On my 30 before 30 I would like to be in the best shape of my life! I have 5 years to reach that goal, but I plan on doing it ASAP rather than later. I rejoined the gym right after Christmas so I have had a head start, and now I have a bunch of gym buddies to keep me motivated. I definitely think I can beat this goal and continue to live a healthy lifestyle in 2014!
 
 

two :: I have been saving to purchase my first house! Since about a year ago, I have really debated whether I wanted to make a huge, expensive, scary, big purchase for myself and it is such a difficult decision to make. I have debated on whether to purchase a house or a condo based on the responsibility of a house and all the work that goes into it. Or whether I want the condo since I am not married yet, although the boy will be coming along with, and eventually keep it as an investment. Also, the housing market is SOOOO expensive in this area since we are so conveniently located right outside of NYC, but I also need to be fairly close because of my job. There are a lot of decisions to be made but I am working towards making this thing happen this year!

 
 

three :: I would love to focus more on the now rather than the what’s next? I find myself always being stressed about what is going on tomorrow, next week, next month! My mind is always racing and I guess that it the planner in me. I always have to have a plan and some organized way to do everything and it sometimes takes the fun out things. I need to allow things to just happen, not worry about timing or scheduling and just enjoy NOW. Enjoy today, because life it truly too short and if things are good now let them be good and worry about the bad when it happens. We can’t always predict, plan or prevent bad things from happening, that’s life, but I need to learn to roll with it and work it out later.

 

four :: Spend more time with friends and family. They don’t lie when they say time flies! Well, it really does! Can you believe it is January 10 already! It was Christmas like last week right?!! I am in such a routine of wake up, go to work, come home, go to the gym, go to bed and repeat. Yes I see my family everyday when I get home and I see the boy every morning as he drives me to the train but we don’t really spend time together. Yes, I see my friends-some on the weekends, some once a month and some I don’t even realize it has been months since I’ve seen their faces! I get it we are all on this busy schedule called life and we always tend to pick up where we left off but it saddens me that we all don’t spend as much time together as we used to or as we should. I hope that in 2014 I can learn to make more time to spend with my family and friends, whether they are a across town, across the river in NYC or across the country.

 


five :: Kindness. I have posted about kindness before here and it is truly something that is so important to me. It is a shame how oblivious we are to what is around us sometimes that we take for granted the simplest things in life. We are worried about running here or getting there that we don’t observe what’s really going on. People sometimes assume that being kind is something the just can’t “afford”. Being kind doesn’t have to be about money or donating to a cause or buying a coffee for the person behind you (although these are all kind things). But we can also focus on the simple things, the small things that really mean the most. Something like holding the door for the person a few steps behind you, giving up your seat on the train, smiling at someone who looks like they are having a day from hell. I hope in 2014 that at least once a day I can make someone else appreciate kindness. I hope I can be kind and spread kindness to others.

That Awkward Moment...


So, last weekend was pretty uneventful. Between the snow storm we had on Friday, working out every day and getting back into the swing of things, it was more of a weekend to relax and catch up on loose ends that we left hanging from the holiday craze.

However, after being cooped up in the house all day on Friday, we decided to see a movie on Friday night. We attempted to see Wolf of Wall Street which I heard was absolutely amazing, but of course it was sold out. Can't blame the people for wanted to see some Leo! So we ended up seeing The Secret Life of Walter Mitty. Since seeing the previews to this movie it was one of those films that I say to myself, wait till this one comes out on Netflix or Demand, but since I wasn't at the movies by myself, I compromised. :)

Now for my awkward moment! If you follow me on Instagram (cdelv2)  you may have seen this picture I posted...
 



A few weeks ago we went to a remodeled movie theatre in our area. We heard that they recently were bought out by a new company and the inside now has recliner chairs! YES each person gets to sit in their own recliner-leather with an electrical button that leans you back and kicks your feet up. BEST.IDEA.EVER. If I'm being honest here, I don't know why it took them this long to come up with this fabulous idea. Anyway, on Friday we decided to go there again, well we basically made the decision there would never be a good enough reason to go anywhere else to watch a movie..amiright?!!

So we get to the theatre, pick our seats and wait for the movie to start. Like I said, I was not that interested in seeing this one but once it started and things started to pick up, I was really interested in what was going on and seeing how it all panned out. Well after a week of working out every day and working all week, aannndd laying around working Friday I guess you could say I was a little tired...and a little too comfortable because I fell asleep! Yup! All cuddled up in my recliner chair, dark theatre I passed out. The three other people I was with never even noticed and thought to wake me up. But once the movie ended and the music got really loud (it's a movie, the music is always loud) it woke me up and I yelled..."Wait it's over?!!"

I had no idea that I had missed about 45 minutes... 45... of the end of the movie! Ooppss! And not only was I surprised that I fell asleep I yelled at the end of the movie for the whole theatre to hear that I missed the ending. Ya know sometimes you wake up quickly and you need to grab a hold of your surroundings, adjust to the light and noise around you. Welp not this girl! I just panicked and yelled it out that I was upset the movie was over!

A little awkward...and embarrassing. Glad everyone else thought it was hilarious!
I seriously cannot hang on a Friday anymore! Old much?!

Taste of Tuesday: Escarole and Beans


This is the perfect dish to share on such a terribly cold day here in New Jersey! It is about 6 degrees today and there is nothing better on a cold day than some soup! This is one of my favorite Italian soups for the winter months. It's so hearty and comforting and definatley fills you up and keeps you warm! Plus it's pretty easy to make...and who doesn't love easy!




What you need!
     2 bundles escarole
     1 can cannellini beans with juices
     1/4 cup olive oil
     1 can reduced-sodium chicken broth
     3 garlic cloves
     1 medium onion
     1/2 tsp crushed red pepper
     Salt/pepper to taste
           Optional: pepperoni

What to do!
     1. Heat about 2 tablespoons of olive oil in a large pot over medium heat.
     2. Add the garlic and onion and sauté.
     3. Add the escarole and remaining olive oil and sauté until wilted.
     4. Next add the chicken broth, beans, crushed red pepper and pepperoni (if using).
     5. Cover the pot and simmer until the beans are heated through.
     6. Season with salt and pepper, to taste.


Serve hot with a fresh loaf of Italian bread for dipping! YUM!

The BEST Boost of Holiday Spirit!


On Christmas Eve Eve....yes you read that correctly we were given tickets to see the Trans Siberian Orchestra. I have been DYING...literally...to see them live. I have heard they are amazing and their show is incredible, plus who doesn't love one of the most famous Christmas songs ever!? On top of my own excited Miss Erin had seen them a few weeks before and right when I thought I couldn't be any more excited she recapped her show and I knew Monday was going to be one of the best concert I've seen.

So that Monday I rushed home from work and went right to have a great Italian dinner at our wonderful hosts house. The weather was chilly and rainy so it was the perfect meal before we headed out to the show. Once we arrived I was more than excited! I couldn't run around the arena fast enough to get to our seat! And on that note, here is a little preview of the best boost to Christmas Spirit!














 
After seeing them play, it truly felt like Christmas time. Between being so busy with work, running around shopping, errands and other business I feel like December flew by and I didn't have time to catch my breath and enjoy the pine scented candles!! I would definitely recommend this show to anyone! It was exciting and fun and they are just so dang talented! Kind of makes me wish I played an instrument longer than just 5th grade....don't tell my mother I said that.

one :: We have been issued a state of emergency and I am snowed in! I was able to work from home today so I am cuddled up on the couch laptop in hand and puppy in my lap. There is nothing better than working home on a Friday and starting the weekend off right! Hope everyone stuck in this snow storm in the northeast is staying safe and staying warm!


two :: I apologize for my blogging hiatus yesterday, but it was nice to spend some time with family and friends and just enjoy the holiday season. But don't fret I'm back in action and ready to go. I'm hoping to really reflect through blogging and bring some interesting topics to this little page of mine. Don't give up on me now!


three :: In addition to all our presents that Santa delivered these bad boys came in the mail last weekend!! For the first year the NHL has decided to host a Stadium Series in NY, Chicago and LA. Lucky for us, my boyfriends, I mean the NY Rangers are playing at Yankee Stadium against the NJ
Devils to kick off the series. I know surprising I'm from NJ but I'm a NY fan. It's just how I was raised and that's how it's going to stay. The next two weeks need to fly!!



four :: Speaking of presents, I received my very own gel nail polish kit! I have had my eye on the kit for a while but my nails never ever come out as nice as when I got to the salon. Going to get my nails done every three weeks was my relaxation moment by myself to lay back, relax and just clear my mind of all the chaos and everything going on in my mind. BUT I got this kit and I absolutely LOVE it. I will definitely be doing a little tutorial because it is one of the easiest things I have even done. PLUS it's saving me about $700 a year!! Who doesn't want to be a part of that?!


five :: I have been reflecting a lot on the past year. Like a lot. I think I have been focusing on it more than I normally do. I guess I feel like I'm getting older and I really need to learn to focus on certain things rather than others. Maybe I need to work on things I've never thought to work on. I plan on looking at 2014 a completely different way and I am going to focus a lot more but also go with the flow and see where this year takes me. More on this lataa!

Our Last Moments in 2013

Well...welcome back Courtney to the blogging world! Woof! It has been quite some time since I've spilt my thoughts here at BSRB but it was a much need hiatus. As some may know, I started a new job this past summer and I was only eligible to accrue a certain number of vacation days and I had already had a planned vacation is August so there went my actual accrued days. Pretty lame that I had to work the week of Christmas and the week of New Year's but hey, that's life right? Sometimes you gotta do what ya gotta do! (Definitely a new 2014 mantra) So since I was working during the last few weeks, I was 'told' that it was going to be the slowest two weeks and I would have nothing to do but relax and work on a few things while the entire office was out. Well, not this girl. It was probably one of the busiest times at work thus far. Since everyone was going to be out, I was lucky enough to pick up some extra assignments to keep me busy. I'm complaining, of course I wanted to relax my brain and rest up for the New Year, but I did keep me busy and made my days fly by. Not too bad I guess. Plus I truly enjoy my job and I like working on new things and learning new ways to accomplish things I have already worked on.
 
So, work was busy, family time was busy, but all was well at the finish line of 2013!
 
The weekend before Christmas was my dad's birthday as I mentioned here but it ended up being just me and the boy. Every year we head into the city to see all the touristy holiday things and it will continue to be a tradition for years to come! For the last 3 years we have booked a hotel a we spend the night so we can run around all night long and wake up and do it all over again in the morning. This year we stayed at the New York East Side Marriot and it was the perfect place. The decor outside and the lobby were soo festive and definitely set the mood for all the holiday things we were going to be doing.
