This is the perfect dish to
share on such a terribly cold day here in New Jersey! It is about 6 degrees
today and there is nothing better on a cold day than some soup! This is one of
my favorite Italian soups for the winter months. It's so hearty and comforting
and definatley fills you up and keeps you warm! Plus it's pretty easy to
make...and who doesn't love easy!
What you need!
2 bundles escarole1 can cannellini beans with juices
1/4 cup olive oil
1 can reduced-sodium chicken broth
3 garlic cloves
1 medium onion
1/2 tsp crushed red pepper
Salt/pepper to taste
Optional: pepperoni
What to do!
1. Heat about 2
tablespoons of olive oil in a large pot over medium heat.2. Add the garlic and onion and sauté.
3. Add the escarole and remaining olive oil and sauté until wilted.
4. Next add the chicken broth, beans, crushed red pepper and pepperoni (if using).
5. Cover the pot and simmer until the beans are heated through.
6. Season with salt and pepper, to taste.
Serve hot with a
fresh loaf of Italian bread for dipping! YUM!
